Three Fun Camping Recipes that You Will Love

According to statistics 47 million people went camping this year. If you were one of those people chances are you looked up some camping recipes because, let’s be honest, sometimes we have no idea what we are doing. Sometimes it feels like the recipe is lying to us because, try as we might, it just never turns out the way the recipe says it will. Sometimes the recipes we do find have hard to follow instructions. Kind of like the Ikea of cooking.

 

It shouldn’t be like that.

 

Here are three of our favorite camping recipes that are delicious, easy, and fun to make with the family.

 

To start our meal off, here is one the best foil dinners. For those who are tired of the meat and potatoes approach of foil dinners, this one is for you. It’s different, delicious, and doable.

 

Chicken and Bacon Foil Dinner

1 box 6 oz stuffing mix

1 1/4 cup water

2 TB melted butter

4 Chicken breast

Salt and pepper

1 ½ cups grated cheese

2 cups cut cauliflower

½ cup cooked bacon crumbs

Ranch dressing

 

Mix stuffing mix, water and melted butter

Lay out aluminum foil, spray with non-stick spray.  Spread ½ cup stuffing over 1 chicken chicken breast.  Sprinkle salt and pepper on chicken.  Add ¼ cup grated cheese.  Add ½ cup cauliflower.  Sprinkle with ¼ cup grated cheese.  Top with ranch dressing and bacon.  Close aluminum foil to make a sealed pouch.  Cook foil dinner in oven or fire for 40 minutes or until chicken is cooked through.  Enjoy!

While your foil dinner is baking in the fire say goodbye to Swiss Miss and hello to delish! This is a hot chocolate recipe you can really treat yourself to. 

 

Hot Chocolate Mix

1/3 cup unsweetened cocoa powder

1/3 cup boiling water

1/3 cup sugar

1/8 tsp salt

3 ½ cups milk

¾ tsp vanilla

½ cup half and half

 

Combine the cocoa sugar and salt in saucepan.  Add boiling water.  Bring mixture to boil while stirring.  Simmer for 2 minutes.  Stir in milk and heat until hot.  Remove from heat and add vanilla.  Add half and half to help cool to drinking temperature.

 

If you like this then try adding one or several of the following:

Peppermint extract, candy canes, marshmallows, oreos, whipped cream.

A meal isn’t really finished without something sweet to top it all off. You may recognize all these ingredients but maybe not the tools. Wolf’em sticks are your new favorite camping tool. They make a little biscuit cup that you can fill with just about anything you like. This is one of our favorite things to fill a Wolf’em with.

 

Stuffed French Toast Wolf’em with Fresh Fruit

 Lemon Sugar + Fresh Fruit

  • ¼ cup granulated sugar
  • zest and juice of 1 lemon
  • 1 1/2 cups fresh fruit (raspberries, strawberries, peaches)

 Whipped Cream Cheese

  • 4 ounces cream cheese
  • 1/4 cup heavy cream
  • 1 tablespoons honey
  • 1/2 teaspoon vanilla

 

Directions:

Add the sugar and lemon zest and stir for 30 seconds.  Stir 2 tablespoons of the lemon sugar over the fresh fruit.

 

Add the cream cheese and heavy cream to a mixing bowl.  Using an electric mixer, beat on high speed until soft peaks form, about 3-5 minutes. Beat in the honey and vanilla until just combined.  Add fruit to cream cheese mixture.

 

Whisk together egg, ¼ tsp vanilla, ½ tsp cinnamon and dash salt until combined in a separate bowl.   Using your Wolf’em Stick, bake biscuit dough for 1 minute.   Brush the egg mixture to the outside of Wolf’em.  FINISHING baking Wolf’em  until done.  Fill with fruit and cream cheese mixture and enjoy!
