Salad for a Crowd

    • 1 1/2 cup mayonnaise
    • 1/2 cup whole milk
    • 1/4 cup fresh parsley, chopped
    • 1 T chives, chopped
    • 1/2 t pepper
    • 1/2 t salt
    • 5 cups iceburg lettuce, chopped
    • 2 medium carrots, grated
    • 1/2 cup red onion, chopped
    • 1 medium cucumber, sliced
    • 1 cup frozen peas
    • 1 cup tomatoes, diced
    • 1 cup sharp cheddar cheese, grated
    • 4 slices of cooked bacon, crumbled
    • 1/4 cup green onions, chopped

Takes , serves 6 people

  1. Dressing: mix together mayonnaise, milk, parsley and chives. Add pepper and salt. Stir well until all ingredients are thoroughly mixed together.
  2. Salad: Layer chopped iceberg lettuce, carrots, red onion, sliced cucumber, peas, and tomatoes.
  3. Spread dressing over the tomatoes.
  4. Sprinkle cheese over dressing.
  5. Garnish with crumbled bacon and green onions.
  6. Refrigerate until ready to serve.
