Salad for a Crowd
- 1 1/2 cup mayonnaise
- 1/2 cup whole milk
- 1/4 cup fresh parsley, chopped
- 1 T chives, chopped
- 1/2 t pepper
- 1/2 t salt
- 5 cups iceburg lettuce, chopped
- 2 medium carrots, grated
- 1/2 cup red onion, chopped
- 1 medium cucumber, sliced
- 1 cup frozen peas
- 1 cup tomatoes, diced
- 1 cup sharp cheddar cheese, grated
- 4 slices of cooked bacon, crumbled
- 1/4 cup green onions, chopped
Takes , serves 6 people
- Dressing: mix together mayonnaise, milk, parsley and chives. Add pepper and salt. Stir well until all ingredients are thoroughly mixed together.
- Salad: Layer chopped iceberg lettuce, carrots, red onion, sliced cucumber, peas, and tomatoes.
- Spread dressing over the tomatoes.
- Sprinkle cheese over dressing.
- Garnish with crumbled bacon and green onions.
- Refrigerate until ready to serve.
